“Calories in, calories out” are old words for weight loss and it is oversimplification of a much more serious problem. American people eat too much, that is true.
According to the USDA, Americans in average can eat more than 500 calories per a day than needed. People in the USA eat 100 % more food than they need, that is conclusion of some experts. This is an extra steak sandwich per day, and since 1970s is 20% increased.
Sudhair James from the College of Chemical Sciences in Sri Lanka it has presented a new way of cooking rice, which should cut the caloric absorption about 50-60%. It is interesting the fact that James found a way how to make the rice become a resistant starch which can resist the absorption of starch or sugar from entering the bloodstream.
The secret ingredient is Coconut oil.
How to prepare it:
In boiling water you need to add a teaspoon of coconut oil. After that you should stir it in half a cup of rice once the oil dissolves .The next things you should do is to simmer the mixture for 40 minutes until the rice is cooked. Our recommendation is to boil it for 20-25 minutes instead. In the end, put the mixture in the refrigerator for 12 hours.
This is the way that will increase the resistant starch content by up to 10 times!
In which way does it work?
Namely, the coconut oil, according to James, enters the starch granules during cooking and makes the sugar resistant to digestive enzymes. That is the reason why it won’t break down and be digested. The cooling process of the rice for 12 hours binds the starch to molecules on the outside of rice and turns the sugar to resistant starch, so reheating won’t affect its levels. Don’t forget that overeating on rice can disrupt your blood sugar levels, so you should eat it moderately. Also in your diet you should include more fiber and nutrient rich foods, as quinoa, barley, sweet potatoes, leafy green vegetables, mushrooms and cauliflower.
